Rhys says: “I enjoy cooking because I like experimenting and trying different things. I especially enjoy putting ingredients together in new ways and seeing what happens. I like trying a little bit of everything, and when one of my experiments turns out really well, I feel proud that I made something good!”
Fun fact: Rhys does 99% of all the cooking in our house!
Easy Library-Night Burritos
We’re always looking for quick, easy meals that are affordable and nutritious—especially on evenings when we have Junk Journal Club or another activity at the library. These simple bean-and-cheese burritos come together in just a few minutes, and everyone can add their favorite toppings.
Ingredients
- 1 pouch or can of refried beans
- Medium flour tortillas
- Shredded cheese
- Taco sauce, to taste (Valentina is one of our favorites – great flavor and mild enough for Mom)
- Sour cream
- Pickled jalapeños, optional
- Ready-to-eat or heat-and-serve Mexican rice
Directions
- Spread some refried beans down the center of each tortilla.
- Sprinkle shredded cheese over the beans and add a little Valentina sauce.
- Fold or roll the tortillas into burritos.
- Microwave until the filling is hot and the cheese has melted.
- Top with sour cream and pickled jalapeños, if desired.
- Serve with Mexican rice on the side.
It’s an inexpensive, filling meal with protein from the beans, and it’s easy to adjust for everyone’s tastes. Best of all, it gets dinner on the table quickly when we have somewhere creative to be!
